ENRICHING BUFFETS:
Prepare on a tray some frisée lettuce, Pachino cherry tomatoes quartered, and some sweetcorn, and lay the tuna fillets on top
FOR COLD PASTA:
Cook the pasta in abundant salted water, drain when still "al dente", and cool. Dress with pieces of tuna fillet, black olives cut into rounds, sweetcorn, desalted capers and grilled courgettes; dress with a sauce made from extra virgin olive oil, chopped basil, salt and pepper.
ONE-COURSE MEAL:
Sauté the peas on a pan with oil and garlic, add the green and white asparagus tips, the orange juice and peel and adjust the salt and pepper. Use to make a base on a plate and arrange the tuna fillets in the centre. Garnish with flaked almonds.


 
Sales Notes
Processing while fresh: the fish arrives at the plant immediately after it has been caught, to be processed immediately. The heads and tails are removed and also the entrails. After initial cooking in boiling water or steaming, the skin, the bones and all the most sanguineous parts are removed. Then they are cut into fillets and carefully hand packed into tins.
Raw material: tuna of the Skipjack species, small-medium sized, whose meat, of a light red colour, has a strong pleasant flavour, due to the good fat content (greater than other varieties)
Spanish processing: the Spanish and Portuguese workforce are particularly skilled in processing fish. Production activity to conserve fish is typical in the southwestern Spain and has been handed down from generation to generation.

Instructions:
Before opening: store in a cool dry place.
After opening: keep the product refrigerated in suitable hygienic conditions* and use within 7-8 days.
*always cover with a lid or film; use clean cutlery; leave the product exposed to the air as little as possible.
