FOR FIRST COURSES
Cut the Cantabric anchovy fillets into coarse pieces and brown gently for a few minutes with a clove of garlic and a drizzle of extra virgin olive oil. Add a bunch of desalted PGI Pantelleria Capers and the date tomatoes. Leave to cook for ten minutes or so. Drain the pasta when still "al dente", pour it into the sauce of tomatoes, anchovies and capers, toss briefly and serve, adding, if necessary, a drizzle of extra virgin olive oil.
STARTERS
Cut the roasted pepper into strips approximately 4cm wide. On top of each strip lay a Cantabric anchovy fillet, a stoned green olive, and then roll up. Bind the packet with a strand of blanched chive and close with a tooth pick. Accompany with a sauce prepared with extra virgin olive oil, oregano and some chopped garlic and parsley.


 
Sales Notes
The Cantabric Sea: the waters of the Cantabric coast to the north of Spain are the best for anchovies, since they offer an ideal habitat. In fact, this cold, well-oxygenated sea, ensures abundant food for the anchovies. These factors combine to create an ideal fat layer which makes the meat particularly delicious.
Spring – Summer: the right moment for surface fish which respects the environment and does not harm the seabed. In fact, in this period, the fish rise to the surface to feed and reproduce.
Traditional Spanish processing: the anchovies are processed to guarantee freshness and bring out the special characteristics of this species. They are cleaned and filleted by hand, left to maturate in barrels of salt and then packed by hand into containers and cold filled with olive oil.

Before opening: store in a cool dry place.
After opening: keep the product refrigerated in suitable hygienic conditions* and use within 7-8 days.
*always cover with a lid or film; use clean cutlery; leave the product exposed to the air as little as possible.
