FIRST COURSES
Sauté the peeled and crushed garlic in the oil. Add the Pelatichef and cook over high heat for about 10 minutes. Add the chopped basil and clams at the end of the cooking time. Adjust the salt, then pepper to taste. Dress the previously cooked linguine in abundant salted water.
SOUPS:
Prepare a soup with onion, strips of pepper, chopped chilli, cherry tomatoes and the clams. Serve with slices of toasted bread.
STARTERS
Blend together cooked green beans, eggs, cream, salt and pepper. Pour the mixture into a well-buttered mould and bake. Stir fry the clams with the garlic. Dress the clams with a pinch of parsley, basil and peeled ginger, adjust the salt. Remove the flan from the oven and arrange the clams and herbs on top.


Sales Notes
Raw Material: clams (tapes decussatus) can be recognized by their size of 3-4cm, by the markedly elongated shape of the shell, and by their highly varied colouring, which in general is brown with darker radial stripes close together.
The most used clam: amongst the many types of clam, tapes decussatus is the most appreciated for its soft sweet flesh of medium-large size.
In its shell: we have selected the product for its size and the integrity of the shell, since these are important characteristics that define the appearance and attraction of dishes prepared using molluscs (soup, spaghetti with clams…)
